R.I.P. Jim B.

Renee’s (our receptionist) husband passed away peacefully Wednesday night. He battled lymphoma for a little over a year. We watched Renee deal with all of the ups and downs of treatment, treating one area to only have it come back in another, each and every time. It was a tough year for her and everyone around her. I hope the family can move on knowing that he’s no longer suffering.

Our entire office will be attending services over the weekend and we are closing the office for a few hours on Monday for the funeral. That alone describes the type of person Renee is.

I’ll miss my desk but my chair is coming with me!

I just found out at work that I’m going to be moved. My workspace, which I’ve had for the past 6 years, is better suited for a new employee. I, belonging to no particular attorney, am the best one to move. I actually don’t mind at all, I’ll be fine wherever I go. I’m hoping for the desk with the window so I can daydream a bit more. My one stipulation? My chair goes where I go! My behind is used to it!

Yes, Yes, Yes!!

This just made my day! I’m sooo excited! 30 Rock is coming back! This has got to be my absolute favorite tv show these days. My only wish is that it was a full hour instead of 30 min.

Trusted Tours - Vacation Ideas

I’m ready for a vacation. I mentioned in a previous post about wanting to go to Florida, or at least considering it for next year. I’d even settle for a weekend somewhere right about now. I was supposed to go to New York City 3 weeks from now but just may have to cancel because of some work related issues. The last time I went to NYC was with my daughter, a girlfriend of mine and her daughter. The trip was to celebrate their birthdays that are just about 2 weeks apart. It was only one day but it was a fun filled one for sure. We visited Madame Tussauds Wax Museum, the Empire State building, took a carriage ride through Central Park, and even jumped in an infamous NYC taxi cab. The craziest thing we did that day was take the subway to Chinatown! We took a bus tour through Trusted Tours & Attractions, which is a great family vacation idea and I highly recommend it to anyone who is visiting the city. We sat on top of the double-decker bus and were able to hop-off at stops and then get right back on at other stops. There are so many things to do in New York You get to relax and see everything. They offer so many tours, they even have an Alcatraz tour.

White Chicken Chili

I picked up some McCormick White Chicken Chili seasoning mix a few weeks ago and decided to give it a try today. It was a big hit with the whole family. I always buy chicken but grow tired of the same old ways to prepare it. I altered the recipe on the seasoning pack and also added onions. You could add more veggies and it would still turn out great.

1 pkg McCormick White Chicken Chili seasoning mix

1 tbsp. oil

2 lb. boneless skinless chicken breasts, cut into 1/2 inch cubes

1 cup water

2 cans(15–16 oz.) white beans, undrained

1 onion, chopped

Heat oil in large skillet on medium heat. Add chicken; cook and stir 3 to 5 minutes or until no longer pink. Stir in seasoning mix, water, onion and beans. Bring to boil; cover. Reduce heat and simmer 10 minutes, stirring occasionally. Serve with shredded cheese, sliced avocado, chopped cilantro or sour cream, if desired.

Our office is a mess

It’s been a tough time around the office these past few weeks.

First, one of the partners leaves to head off to another firm and we have to change our name and everything else that entails, such as stationary, email, website, signs, etc. I have just started getting used to saying the new name while covering reception at lunch.

Second, one of my office roommates fell and hurt herself pretty bad, she’ll be 60 this year and has been home for the past 2 weeks nursing a broken collar bone. I actually miss her. She’s not expected to be back to work for at least another 2-3 weeks. So I stepped up and offered my help in picking up the slack.

Third, our sweet receptionist is having the toughest time of all. Her husband of 35 years has been battling cancer for the last year, they just put him in Hospice, it looks to be like the next few days are his final ones. Such a sweet couple, forever in love and not afraid to show it. It’s very sad, I’m tearing up now just typing this :(
